i made the veganomicon acorn squash & black bean empenadas today and goodness, did it take a while! this morning before work i roasted the squash for the filling and made the pastry. when i got home, i put together the empenadas, baked them up, and served them with tortilla chips, fresh salsa, and an avacado dip. i had a perfectly ripe avocado hanging around but no limes or lemons for guacamole, so i mashed it up and mixed it with some salsa verde i made a while ago. it was a yummy meal and well worth the time!
